dad's buttermilk waffles

4 c all-purpose flour
1/2 t baking soda
1 T baking powder
2 T sugar
1 t salt
4 eggs, separated
1 quart buttermilk
3/4 c butter, melted and cooled slightly

  1. Sift flour before measuring, then sift again with soda, powder, sugar, and salt into a large bowl.

  2. In another bowl, beat the egg yolks thoroughly. Add the buttermilk and melted butter. Combine the liquid and dry ingredients.

  3. Beat the egg whites until stiff. Fold into batter (do not stir).

  4. Bake waffles in a heavy waffle iron until browned, about 7-8 minutes each.

Makes 9-10 6" waffles.

 

These waffles have the sweetly sour taste of a good buttermilk recipe, and a nice crisp crust. Serve them with seasonal berries and whipped cream for a decadent Sunday morning breakfast.

If there are only a few of you, don't bother halving the recipe -- make the whole batch and freeze the remainder after they've cooled on a wire rack. A minute or two in the toaster oven will crisp them up for a great snack for days to come.
