dad's popovers

1 c all-purpose flour
3/4 t salt
1 c milk, warmed (whole or skim)
2 T unsalted butter, melted
3 large eggs
2-3 t shortening

  1. Preheat oven to 425°F.

  2. In a large bowl, whisk together flour and salt.

  3. In a separate bowl, whisk together milk, butter, and eggs. Make a well in the flour, pour in the milk mixture, and whisk to make a smooth batter. Set batter aside for 10 minutes.

  4. Heat a non-stick popover or muffin pan in the oven for 5 minutes. Carefully remove pan and grease the inside of the cups with shortening. Ladle the batter into the cups (not to the top) and bake for 20 minutes. Do not open the oven at any time during baking.

  5. After 20 minutes lower the oven temperature to 350°F and continue baking for another 20 minutes. At this point the popovers will be golden brown. Remove the popovers and spear each with a knife to release steam. Serve immediately with butter and jam.

Makes 6-8 popovers.

 

These breakfast popovers are easy to make and provide dramatic results that are sure to wow your family or guests. You can easily double the recipe for a yield of up to 15.

Expect most adults to eat between 3-4 for a full breakfast. Popovers do not freeze well, so make sure you eat all that you make on the same day!
